The secret to these wings is one of the freakiest and most unlikely ingredients out there: Fish Sauce! I know, it’s stinky, salty – strange!  But during the cooking process, something quite delightful happens and these wings turn out killer!  This is an adaptation from an old Everyday Food recipe, but I will say that after making it the original way, then my way a couple times… my recipe is much better!!  And I also made a quick spicy dipping sauce…. so – take that Martha!  (by the way, this recipe takes a couple hours to cook, so it’s not exactly an “afterwork” recipe)

Sticky Sweet Chicken Wings


3/4 cup packed brown sugar

1/4 cup fish sauce

1/4 cup fresh squeezed lime juice

1 tbsp freshly grated ginger

4 cloves garlic, minced

2 serrano chiles, chopped fine – seeded if you don’t like too spicy

1-2 lb chicken wings


Preheat oven to 300degrees.  In a small bowl, combine brown sugar, fish sauce, lime juice, ginger, garlic & chilis.  Stir till the sugar is melted.  Arrange the wings in a baking dish and pour the marinade over top.

Pop in the oven for an hour at 300, turning once half-way thru.  Now, jack up the oven heat to 450degrees and continue to cook in 15-20 minute increments, taking out and turning the wings each time.  Do this about 3 times (so for about another hour) until the sauce has thickened and turned sticky.

I serve with a quick dip; combine 1/4 cup Ranch dressing or sour cream, 2 tbsp mayonnaise and 1-2 tbsp of chili garlic sauce or sriracha depending on how much spicy you like.  Serve with a couple wedges of fresh lime!
